Big, bold, and out of control, Annihilator is an American barleywine that will unleash a barrage of flavors on your palate. It begins with a base of British Maris Otter barley for a solid foundation. Smatterings of dark British crystal malts are added for toffee and caramel accents. A three-hour boil helps enrich the deep and complex malt backbone. A heavy dose of Chinook, Columbus, and Cascade hops gives this mighty barleywine a bright and citrusy bitterness. Annihilator is waiting to be challenged by discriminating drinkers.

Beer of the Dragon is an imperial red ale with an arsenal of flavors and aromas. A base of American 2-row malt combined with smatterings of British caramel malts make way for these rich flavors to be skillfully balanced by pungent American hops. ‘Chaos is a Friend of Mine’ is the result of blending barrels of our base beer to produce the flavor profile of a Belgian Lambic. We begin with a traditional grain bill composed of pilsner malt and raw wheat, which is then boiled for an extended amount of time with aged hops. The wort is then fermented and aged in neutral French oak barrels with our diverse house culture. Chaos ensues from the countless strains of yeast and bacteria fighting for dominance, and after 9 - 14 months in the barrel, we introduce the power of blending to bring order back, ultimately creating a beer that's greater than the sum of its parts. Funk takes center stage in this brew, with notes of barnyard, stone fruit, and aged hops. A balanced and clean acidity make this beer tart, yet extremely palatable, with a full body and crisp dry finish.
Hopheads rejoice! Citraholic is a "modern" West Coast-Style IPA that's focused on Citra, one of our favorite new American hop varieties. Brewed with an abundance of Citra hops, we also blend in Warrior, Columbus, and Simcoe in the kettle for good measure. Citraholic is double dry hopped for two weeks with an abundance of Citra (and a touch of Columbus) imparting heavy aromas of citrus & tropical fruits with melon and gooseberry nuances. A base of American 2-row malt and scatterings of light British caramel malt create the perfect foundation for this unique and powerfully pungent IPA. You asked for it and we were happy to deliver! An American Stout brewed with rye malt for a silky body. Kilgore is brewed with British roasted barley and chocolate malts for a roasty backbone with notes of coffee and cocoa. Laurel IPA is another addition to our portfolio of West Coast-Style IPAs. The foundation is laid with a base of American 2-row malt and a dash of light British caramel malt. Five different hop varieties are added to the kettle for massive layers of hop goodness. Amarillo, Summit, Columbus, Centennial, and Simcoe intermingle for an energetic burst of citrusy hop flavors. A generous dry hop addition of Amarillo, Centennial, and Summit make for a dank and pungent aroma that is sure to entice the most discriminating "hop head". IBUs 99
Mocha Machine is a well-engineered endeavor in massive aromatics and rich flavors. Brewed with an array British and German malts, this burly brew is infused with masterfully roasted coffee from Portola Coffee Lab in Costa Mesa, CA. It is then aged on cacao nibs from Ecuador, adding an awesomely deep dimension of fudge. IBUs 36
Jean-Quad Van Damme is an inspired Belgian-style quadruppel. A mosaic of German and Belgian malts are melded with specialty Belgian "candi" syrup. The result is a wide swath of dark fruit flavors with accents of cognac. Floral hops from Germany provide the perfect balance to Quattro's impossibly complex maltiness. Fermented with out favorite Belgian yeast, this beer clocks in at 11.3% ABV. IBUs 33
